I fitted 2 EGT's and maybe a bit of an over kill, 2 CHT probes as well - the CHT's will not display the true Cyl Head Temp but will provide me with a figure to compare the other temps with.
Normal straight and level flight yields 65 - 75degC and a CHT of +/- 90 -100 degC.
My water temp gauge sometimes jump from lest say 75 degC to 65degC and back and also climbs to 87/88 degC but CHT temp stays the same - therefore i assume its the water temp probe/sender thats causing havock. maybe i'm wrong but i have been using it like this for a while now.
