If a 582 is running lean by how many degrees would it make the water temperature and egt's rise??

I don't think you will see it in the water temps. Your EGT's will rise towards the upper limits but by how much depends on how lean the mix is.
If you are running high EGT's then your next best best indicator would be your plugs. They should be burning nice tan brown. Anything tending towards white or light grey is a lean condition and can/will damage the engine. If you are running lean look at your jetting and carb setup
You can use the EGT's to fine tune and balance the carbs once you have the mix almost right.
I have emailed you a doc on serviceing and setting up the carbs correctly

If your plugs are burning fine but the EGT's are still high, check the loading on the motor, i.e. the prop pitch. If you increase the pitch you tend to load the motor more and as a result the EGT's push up.
