Grumpy, remember they have their own chef and staff. Unlike us who have to hire it in, which is where the lamb on the spit works well

I don't think you should worry about numbers too much Paul.
Keep the costs down and have guys pay up front,
and a few days before the event you will have reasonably reliable numbers.
Guys will come if there is enough reason to be there.
Price, vibe, gees, dop, chow, k@k praat, support a cause, prizes (Thanks Zulu)

I still believe pricing and timing play a big roll. Timing is good.
